Do you know the feeling that you need to have something at hand that will give you instant but good quality energy? I am sure you do. That is why I like to make my own lemon energy bars. Perfect for those moment. Instead of grabbing the first thing you see, you know that something good and nutritious is waiting for you.
My whole family loves them. They are perfect as breakfast on the go, after an intense workout, during a long meeting, as a 4 o’clock snack… actually they are perfect all the time. They are made with only good ingredients: raw nuts (remember… “a handful of nuts a day will keep the doctor away”), dried fruit, honey, poppy seed and lemon. The fresh touch of the lemon is what I like most about these energy bars. And did you know that lemon and poppy seed are a match made in heaven? I have no clue why, I just know that they belong together.
Nice about these lemon energy bars is that they are no-bake, so no oven needed, only a food processor.
lemon energy bars
no-bake energy bars with cashew nuts, almonds, lemon zest, poppy seed, dates, apricots, grated coconut, almond butter and honey
- 75 gr cashew nuts
- 25 gr almonds
- 1 tbsp almond butter
- 40 gr grated coconut
- 75 gr medjool dates
- 50 gr dried apricots unsulfured
- 1 tbsp poppy seed
- 2 tbsp honey raw
- 1 tbsp lemon zest
zest 1 lemon
grind the nuts with your foodprocessor to a coarse flour. You want your energy bars to have a bit of bite. Set aside
Add the dates, apricots, coconut, almond butter, lemon zest, poppy seed and honey to your foodprocessor and mix till it forms a sticky ball
Knead both mixtures with your hands until well combined
line a 15 * 20 cm tray with baking paper. Add the mixture and press well
Put in the fridge over night to firm up. If you are in a hurry you can also them in your freezer for 30 minutes and then keep them in the fridge.
Cut into 8 bars and keep refrigerated
