Now that spring has officially arrived in The Netherlands, I am in the mood for citrus fruit. I zest lemons and limes for my chia pudding, put it in my smoothie, dressings, well actually in almost everything.
So I thought, why not make some cookie dough like lemon & lime bliss balls. Soft and sweet but at the same time very citrusy, exactly the way I like it. To make them really great as a post workout snack… which I really need after my Ashtanga yoga practice in the morning, I have added some protein powder.
Did you know that proteins together with amino acids are great for muscle recovery after a workout? So i do not think is it a punishment to treat yourself to one of these gorgeous lemon & lime bliss balls.
lemon & lime bliss balls
Vegan cookie dough bliss balls with lemon & lime
- 75 gr medjool dates
- 50 gr apricots
- 50 gr almond flour
- 50 gr coconut flour
- 125 gr apple sauce unsweetened
- 25 gr grated coconut
- 37,5 gr vanilla protein powder
- 2 tbsp lemon juice
- 1 tsp lime zest
- 1 tsp vanilla extract
- 20 gr grated coconut garnish
- 1 pinch salt
put the dates, apricots, apple sauce, lemon juice, lime zest, vanille extract and grated coconut in your foodprocessor and mix until it is a puree
add the almond flour, coconut flour, protein powder and salt and mix until it forms a sticky ball
with your hands, roll 16 balls of each 25 grams. To get a nice effect roll them through a bowl filled with grated coconut
put them in your freezer for 30 minutes to stiffen. After than store then in the fridge
