Muffins, to me they always are a bit of a treat. But unfortunately they are not always that healthy. But that is about to change now!
A pumpkin bread served as muffins, can it get any better? Super healthy, no refined sugar, gluten free and just simply beautiful. This is a true healthy snack or treat that I can highly recommend.

healthy pumpkin muffins
healthy muffins made pumpkin puree. refined sugar and gluten free. A true healthy treat!
Ingredients
- 200 gr pumpkin puree
- 120 gr banana very ripe
- 2 eggs
- 50 gr yoghurt
- 50 gr raisins
- 40 gr pecan nuts unroasted, unsalted
- 100 gr buckwheat flour
- 50 gr almond flour
- 15 gr flax seeds broken
- 1 tsp baking powder
- 1 tbsp cinnamon
- 1/2 tsp ginger powder
- 1/2 tsp vanilla powder
- 1 pinch salt
- 20 gr pumpkin seeds
Instructions

preheat the oven to 180 degrees Celcius fan mode

roughly chop the pecan nuts

mix the flour with the flax seeds, salt, baking powder and spices

mash the banana, add the pumpkin puree and yoghurt and mix well. Then add the eggs 1 by one

add the dry mixture to the wet mixture and stir well. Then add the raisins and pecan nuts, stir again

prepare a muffin tray with baking spray or parchment baking cups. Divide the mixture over 12 muffins. Sprinkle the pumpkin seeds on top

Put in the oven for 25 to 30 minutes
