If you would have told me a week ago that it would be possible to create the most fluffy and moist pancakes without egg, I would not have believed you. But that all changed when I found this incredible recipe from my fellow, and very successful, foodie Magda from Oatmeal stories
And yes, super nice, she allowed me to share her vegan pancakes recipe on my website. Lucky me… and of course lucky you, as you now get the chance to try them for yourself!
What I like most about them it that are so tender and you do not need any difficult ingredients to make them. Super easy and super nice!
vegan pancakes
vegan pancakes, that are gluten free, made with buckwheat flour, banana and almond milk
Ingredients
- 100 gr buckwheat flour
- 1 tsp baking powder
- 1/2 tsp vanilla powder
- 1 tbsp coconut sugar
- 1 tsp lemon zest
- 125 gr banana very ripe
- 2 tbsp coconut oil liquid
- 125 ml almond milk unsweetened
- 100 gr blueberries optional
Instructions

mix the first 5 ingredients (flour, baking powder, vanilla powder, coconut sugar and lemon zest)

put the banana, liquid coconut oil and almond milk in your blender and mix until smooth and well combined

add the wet to the dry mixture and whisk until well combined. optionally add the blue berries to (part of) the mixture

heat a small skillet, if needed grease with a bit of coconut oil, and bake the pancakes one by one
