Ever since I have The Green Kitchen cookbooks and spring has arrived, I love cooking even more than I already did. I am really in the mood for trying new vegetarian dishes. Mostly I create the recipes myself, but trying the recipes from David and Luise is a true treat, as they really master creating good food!
What I really like is their obsession with lemon, that is something we truly have in common. Lemon goes with almost everything. If you taste a dish and you think… yeah it is OK, but it lacks something… the answer is 9 out of 10 times LEMON!
Going through their book The Green Kitchen my eye caught their recipe for courgette rolls filled with passionfruit & lemon ricotta. It could not have been a better match as my dear friend Christa just brought me some delicious yellow passionfruits from Peru. What a coincidence! And what a great dish for spring! And it does not only taste nice, it looks also incredibly nice!
As always, I have changes bits and pieces of the recipe, but it stays very close to the original one.
