Yes, some more beetroot today. This time a creamy, silky beetroot & goats cheese spread. Perfect as appetizer or on your sandwich. It has a sweet but present (cheesy) taste with a fresh touch of lemon.
This beetroot spread is a great dish for a brunch, picnic, bbq or family lunch. It is a bit of a surprise, next to the more traditional egg salad, cheese, tuna mayonnaise… but can really compete. Not only for the taste, but look at that colour! You would almost instantly fall in love. At least, I would!
It is also very good to try with the kids. They will be attracted to the colour. The sweet taste is something most of them will like. And that is something that cannot always be said for food with a green colour, if you know what I mean 🙂
Ingredients
- 150 gr beetroot cooked
- 65 gr goats cheese soft
- 6 sprigs chives
- 2 tsp lemon juice
- pepper
- salt
Instructions

Chop the beetroot, cheese and chives. If you use raw beetroot, you will have to cook it fist!

Put all the ingredients into your food processor / stand blender and mix will you have a smooth, well combined spread

Season to your own taste with pepper and salt

Serving suggestion: garnish with some roasted sunflower seeds, micro greens and chives
