Whenever we are in France, this is, as well as tabouleh, one of those dished that we instantly buy at the supermarket, every day, over and over again. The French really know how to make the perfect carrot salad!
This is my attempt to creating it at home. My twist is adding a little bit of freshly grated ginger, which goes really well with the acidity of the fresh lemon juice.
I love putting carrots on the table and so does my family. It is one of these vegetables that has a crunch, is very taste and looks great. Besides that it is also a great source of beta-carotene, fiber, potassium, antioxidants and vitamin K. This vegetable and so does this carrot rappee, fits really well in a healthy lifestyle.
This year I even do an attempt to grow them in my own little vegetables garden. I am so curious to find out if I succeeded. Will keep you posted!
Ingredients
- 250 gr carrot
- 2 sprigs parsley
- 5 gr ginger
- 1 tbsp olive oil
- 2 tbsp lemon juice
- 1 pinch pepper
- 1 pinch salt
Instructions

clean the carrots and finely grate them in your food processor. No food processor? No worries, grate them by hand

finely chop the parsley and grate the ginger

mix all ingredients together in a large bowl, use your hands if you like.

carefully mix in the olive oil and lemon juice and season to your own taste with pepper and salt
