Elderflowers, if only the smell could last for a lifetime, it would already be great! And I did not even mention their looks. Such a beautiful flower, it almost feels like a shame to pick it from the tree. But hey, without elderflowers no elderflower syrup…
So there I want on my bike with a bad and a pair of scissors… heading to one of my favourite spots in the word, the dunes of The Hague. It is always a good idea to go there and now even better as I was on a mission to find elderflower.
I did not take a lot of time to find the first branch… and the smell, yes, what a great idea to make this syrup! Some nettle stings and red ant stings later, I had collected the 20 elderflower umbels. I felt a bit like a little girl that is doing something forbidden… but then I thought, taking something form nature to turn it into something even better is not a crime.
So now we wait for at least 48 hours to taste the syrup. Are you as curious as me? If so, hurry, the elderflower blossom will not last forever!
Ingredients
- 20 elderflower umbels
- 200 gr honey
- 5 tbsp lemon juice
- 1 1/2 lemon - peel
- 1 litre water
Instructions

boil 1 litre of water and add the honey. When the honey is resolved take it form the heat and add the lemon juice

put the elderflower umbels and lemon peel in a pan and poor the honey lemon water on top. Stir carefully, lid on and let it cool down

wait for a minimum of 48 hours, stir occasionally

poor the syrup though a cheese cloth and use a funnel to put it in a sterilised glass bottle. Keep in the fridge. Serve with sparking water
