This is what I call a briljant breakfast! Fresh berries with creamy (but low fat) Greek yoghurt, home made strawberry sauce and topped with the most delicious oven roasted nuts and seeds granola. It cannot get much better, I can tell you! While eating this, you really wish that the glass will not get empty… Is that great or what?
I consider breakfast as my most important meal of the day, especially because I eat it after an intense Ashtanga yoga practice. So the most important meal a day better be a good one that I can enjoy big time. The granola breakfast contains over 20 grams of protein, which is great after a workout for muscle repair.
If you know my nuts & seeds granola recipe, you know that it is inspired by the nutty granola recipe from Nora French her cookbook Healthy Fast Food. Give it a try, you will not regret it!
Of course you can replace the Greek yoghurt with any time of vegan yoghurt. I leave that up to you!
Ingredients
- 150 gr greek yoghurt
- 25 gr strawberries
- 25 gr blueberries
- 25 gr raspberries
- 15 ml strawberry coulis
- 40 gr nuts & seed granola
Instructions

clean the strawberries and cut into quarters. Put 3/4 of the berries in the glass

add the yoghurt and then the strawberry sauce

put the rest of the berries and granola on top
