Salad, salad, salad. With this nice, hot, weather there is nothing that I rather eat than salad! Do you recognise this feeling? You can make so many different ones, I can them every single day for lunch and dinner!
In Greece they really know how to cook, at least that is my opinion. Stuffed zucchini flowers, oven baked feta, stuffed rice leaves with the most delicious rice… I can go on and on.
One of the dishes that really is a family favourite is Greek salad. First of all an excellent way to eat lots of vegetables, but also a great combination of flavours and textures. The freshness and juiciness of the raw veggies is something we love. And it gets even better by adding the tender and salty feta cheese. Oh yes, it is really a salad that will get you hooked!

refreshing greek salad with cherry tomatoes, sweet pepper, red onion, cucumber, kalamata olives and feta cheese
Ingredients
- 150 gr cherry tomatoes
- 100 gr sweet pepper
- 75 gr red onion
- 200 gr cucumber
- 75 gr kalamata olives deseeded
- 100 gr feta cheese
- 1 tbsp olive oil
- 2 tbsp white balsamic vinegar
- 1 pinch pepper
- 1 pinch salt
Instructions

Cut the tomatoes in halves of quarters, depending on their size. Clean the sweet pepper by cutting in the half in the length and take out the seeds and membranes. Then dice in 1/2 cm stripes

Slice the cucumber in 4 mm slices and then cut in 4. Clean the onion and cut in the half moons

If you have olives with pit deseed them first. Otherwise just cut them in half

Crumble the feta

Carefully mix all the ingredients in a large bowl, preferably with your hands. Add the olive oil, vinegar and mix well. Season with pepper and salt to your own taste
