Yes yes, I know, I am a big strawberry addict! And this desert is truly my favourite. Everytime I tell people I use pepper and vinegar on for my marinated strawberries, they look at me with big eyes. They only understand why after they have tried it!
Originally I used an authentic Italian recipe with classic balsamic vinegar and sugar. But after a while I started to give it a twist ending up with a perfect blend of acidity, sweetness and freshness. My secret?
White balsamic vinegar, lavender honey and fresh mint… The pepper is the cherry on the cake, enhancing the smell of strawberries. Wow, I love this desert.

marinated strawberries
strawberries marinated with white balsamic vinegar, lavender honey, fresh mint and pepper
Ingredients
- 250 gr strawberries
- 1 tbsp white balsamic vinegar
- 1 tsp lavender honey
- 6 leaves fresh mint
- 1 pinch pepper
Instructions

clean the strawberries and cut in half of quarters, depending on the size. Finely chop the mint leaves

mix the vinegar and honey and whisk till all honey is resolved

add all ingredients except the pepper in a bowl, stir carefully and put in the fridge for 1 hour

just before serving, grind a bit of pepper over the strawberries. This will enhance the smell!

optionally serve with 2 tbsp of Greek yoghurt per person
