Tabouleh, I can talk about this dish for hours. This is by far the first thing we buy in the French supermarket whenever and wherever we are in France! A true favourite.
What is tabouleh? Originally it is a Middle Easters dish made with lots of fresh parsley, mint, tomatoes, onions and bulgur. The lemon-based vinaigrette in combination with the herbs really gives it a refreshing taste. Great in summer time! Nice about this dish is that you can vary a lot with it. I love to use couscous and add sweet pepper and raisins. It is more or less up to you, whatever you like you can put in, how great is that!
In order to add a bit more vegetables to this dish, I decided to make it partly with cauliflower ‘couscous’ and partly with wholewheat spelt couscous. You could even make it solely with cauliflower ‘couscous’!
Ever since my little boy can eat he has been a fan of tabouleh. The structure of the couscous, the freshness of the lemon and the sweetness of the raisins, a perfect match! So this dish is on the family favourite list and it will most certainly stay there forever!
cauliflower and couscous tabouleh
middle eastern tabouleh from cauliflower and spelt couscous with a refreshing dressing made from lemon juice and apple cider vinegar
- 50 gr spelt couscous dry weight
- 75 gr cauliflower
- 25 gr sweet pepper
- 50 gr tomato 1 medium sized
- 15 gr red onion
- 40 gr raisins sultana
- 10 gr flat leaf parsley
- 5 gr fresh mint
- 1 tbsp olive oil
- 2 tbsp lemon juice
- 1 tbsp apple cider vinegar
Prepare the couscous according to the instructions on the package and let it cool down
Cut the cauliflower into florets and process in your food processor until it has a couscous structure
Finely chop the fresh herbs and onion. Cut the sweet pepper and tomato into find cubes
Mix the ingredients together with the raisins in a large bowl. Carefully stir in the olive oil, lemon juice and apple cider vinegar. Season to your own taste with pepper and salt
