I really love to play with flavours. This salad proves that. Healthy ordinary vegetables turned into a delicious Asian style salad. That is what I call a good idea!
The freshness and crispiness of the carrot, bean sprouts, scallion and courgette really gives that salad a bite. A good match with the fried tofu, cashew nuts and the sesame seeds. You see, again and again it is about different flavours and different textures that make a dish a good dish. The cashew dressing with ginger and lime is what turns that salad from an ordinary but great salad, into something really special and delicious!
Did you know that you can easily grow bean sprouts at home? They are the sprouts from mung beans! Put the beans in a small container with wet cotton wool and keep moist. You will see that after a few days the beans begin to sprout!

thai salad with cashew dressing
fresh and crispy thai salad with a cashew nut dressing and grilled tofu
Ingredients
- 120 gr carrot
- 120 gr courgette
- 100 gr cabbage
- 50 gr scallion
- 100 gr bean sprouts
- 60 gr cashew nuts oven roasted
- 2 tsp sesame seeds
- 1 tsp black sesame seeds
- 6 sprigs coriander leaves only
- 300 gr tofu firm
- 1/2 tsp salt
- 1 tbsp coconut oil deodorized
cashew dressing
- 60 gr cashew butter
- 1 tsp agave syrup
- 3 tsp lime juice
- 1 tbsp tamari
- 1 pincn chili flakes
- 1 tsp ginger fresh
- 2 tbsp coconut milk
- 1/8 tsp sesame oil
- 2 tbsp water
- pepper
- salt
Instructions

drain the tofu and pat dry. Cut into 1 1/2 cm cubes and season with salt. Heat the coconut oil in a non stick pan and fry the tofu for several minutes. Turn frequently so that all sides get a nice crispy layer

For the dressing: grate the ginger and juice a lime. Mix all the ingredients together and whisk until well combined. Season to your own taste with pepper and salt

Use your spiralizer to cut the carrot and courgette, finely chop the cabbage and scallion. Mix together with the bean sprouts, roughy chopped cashew nuts, tofu, sesame seeds and coriander. If you do not have a spiralizer use a mandoline or speed peeler

Add the dressing and mix with your hands. Garnish with some more sesame seeds
