Gazpacho, there is something about this dish… first of all you instantly feel like you are in Spain, which is always good! Secondly, at least for me, I truly enjoy the pure and refreshing taste of fresh, raw vegetables. I really feel like treating my body to something good!
Ingredients
- 500 gr tomato
- 45 gr red onion
- 7 gr garlic 1 large clove
- 45 gr scallion
- 200 gr cucumber
- 100 gr green bell pepper
- 100 gr sweet pepper, red
- 3 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1/2 tsp spicy paprika powder
- 1 pinch pepper
- 2 pinches salt
Instructions

roughly chop the onion, garlic and scallion. peel and chop the cucumber. deseed and chop the peppers. Core and chop the tomato

put all the ingredients in your blender and process until well combined. Season to your own taste with pepper and salt. Want to spice it up a bit? Simply add some more spicy paprika powder 🙂

let it cool in the fridge for at least 1 hour
