Burgers, to me they always seem like a good idea. No excuse needed! But for me preferably no meat, so looking for great and healthy vegetarian alternatives that have a good bite.
And yes…. I found it! Carrot pulp left after juicing carrots is an excellent base for these healthy carrot burgers. They are full of flavour, fresh ingredients and have a texture that reminds me of the best beef burger I had. So I would say… try this great no waste recipe and make everybody happy!
Did you now that even only swapping 1 day per week meat for veggies will be a great benefit for our planet? It reduces CO2 exhaust, saves a lot of water and is also a great benefit to your own health. No excuse needed for these healthy carrot burgers.
Ingredients
- 200 gr carrot pulp or grated
- 100 gr feta
- 30 gr oatmeal
- 2 eggs
- 5 gr fresh coriander
- 5 gr fresh flat leaf parsley
- 1 pinch garlic powder
- 1 pinch pepper
- 1 pinch salt
- 1 tbsp olive oil
Instructions

mix the ingredients together and set aside in the fridge for 30 minutes

preheat the oven to 175 degrees Celcius (fan-mode)

line a baking tray with a sheet of baking paper

divide the mix into 8 small burgers

put in the oven for 20 minutes, carefully turn them around half way

you can also make large burgers instead of small ones. Be aware though that the baking time will increase!
