I am so extremely proud of this dish, I cannot express how much in words. This dish to me is about quality of living. The Swiss chard I grew from little seeds in my small vegetable garden. The colours were amazing, almost to beautiful to cook! The pesto is made from nettle that I picked just around the corner of where I live.
To me this is about remembering time and time a again, that little things in life are for free and that with love and care you can create such beautiful things. And of course that does not stop with watering the plants in my vegetable garden… When I look deep in my heart, this is about how I should raise my son, how I should treat the people around me and even so importantly how I should treat myself.
This realisation is part of my journey to a happy & healthy life, where yoga is one of the key elements. Yoga is something that becomes your lifestyle. And there is so much to learn during this journey. What I mean to say is very well described on the the jivamkuti yoga website and I would like to share that with you in this blog:
“We actually create our own reality. That is how powerful we are! Embracing the wisdom of this sutra involves taking responsibility for our life and the world we live in. It is only then that we can begin to consciously co-create with the universe the world we want to live in, as opposed to perceiving the world as coming at us, as something we have no control over.
This concept of shunyata, or emptiness, is incredibly liberating and empowering. It is only then that we can stop playing the blame game, that we can liberate ourselves from feeling like victims. Responsibility and freedom are two sides of the same coin—you can’t have one without the other. We are the ones who give the meaning to people, objects and situations. Knowing this we will do our best to project goodness and magnificence and extend love into the one world we share. It is what His Holiness the Dalai Lama calls “enlightened self-interest”.”
Now back to food… this pasta dish is really good! Lots of nutrients, leafy greens and a not so regular, earthy taste. I love it!
