Is has never been so warm, call it tropical, for such a long time in The Netherlands. At least not that I can remember. No, I am not complaining, I am just looking for great food and drinks to go along with these temperatures!
One of the things I like a lot during summertime is cucumber. So refreshing and crispy, I can eat it all day long (and so does my little boy). A perfect snack to take with you, great in salad, excellent for infusing your water and of course…. a great ingredient for a refreshing green smoothie!
I also grow them in my little vegetable garden. These organic babies are the best!
Besides the fact that cucumber does not contain a lot of calories, they do contain vitamines and minerals and most importantly they consist mainly of water. So even if you do not drink liters of water a day, eating cucumber will contribute to your hydration.
refreshing green smoothie
smoothie with mango, spinach, cucumber, avocado and mint
- 250 gr mango
- 75 gr spinach
- 150 gr cucumber
- 75 gr avocado 1/2 piece
- 5 gr mint leaves only
- 150 ml apple juice unsweetened
- 250 ml water
cut the mango and cucumber in pieces
put everything in your blender and process until smooth
