Tomato sauce, there should always be some in your fridge or freezer! Easy to make in large quantities and easy to turn in to a quick and tastful meal! There are plenty of variations for tomato sauce.
Today I have chosen the version of my favourite cookbook authors from The Green Kitchen, Luise Vindahl & David Frenkiel. The original recipe can be found in their cookbook The Green Kitchen at Home.
Did you know that if you simmer the tomatoes long enough they lose their acidity and get sweeter and sweeter?
Ingredients
- 1,5 tbsp olive oil extra virgin
- 2 cans diced tomatoes 400 gr each
- 1 yellow onion
- 2 cloves garlic
- 1,5 tbsp tomato paste
- 15 gr basil
- 1,5 tbsp capers
- 1 pinch pepper
- 1 pinch salt
Instructions

finely chop the onion, garlic and basil stalks. Keep the basil leaves aside

heat the olive oil and fry the onion, garlic and basil stalks until they are soft and tender, for about 10 minutes. Regularly check that they do not turn brown.

add the carpers and tomato paste and stir well. Then add the tomatoes and season with pepper and salt. Bring to a boil and let of softly simmer for 30 minutes. Regularly stir and add water if needed

Take the pan of the heat and add the roughly chopped basil leaves. Close the lid so that the flavours can develop well. You can keep it in the fridge for 4 to 5 days. The taste will only get better!
