Avocado, everybody in my family loves them, including my little boy… who actually gets really exited when we eat them. So funny! You will not hear me complain, as avocados are an excellent source of nutrients.
They are the only fruit that contains monounsaturated fat, which is fat that is actually food for you! Further they are packed with vitamins, minerals and phytonutrients, which makes it a really good choice to put them on your menu.
Every time I see an avocado I have a little smile on my face, thinking back years ago when I lived in Johannesburg, and the most delicious avocados ever were growing in my garden. Lucky me!
Todays recipe is based on an avocado sandwich I ate during my holiday in Hossegor, France, at a place called Tante Jeanne. Great ambiance and delicious food! Not to forget about they ice-cream… ones you had that you will never forget!
For now I stick to my healthy friend, mister Avocado, for this super deliciously creamy avocado sandwich!
Ingredients
- 2 slices wholegrain bread
- 100 gr ricotta
- 1 avocado
- 4 sprigs chives
- 2 tsp lemon juice
- 1 tsp olive oil extra virgin
- 2 pinches sea salt
- 2 pinches pepper
Instructions

chop the chives and mix with the ricotta, 1 tsp of lemon juice and olive oil and a pinch of salt and pepper. Set a side for a few minutes

mash the avocado and mix with 1 tsp of lemon juice, 1 pinch of salt and pepper

roast the slices of bread. Divide the ricotta and avocado over them. Top with any kind of grain and seed of your choice!
