When you read on instagram that your favourite cookbook authors, David Frenkiel and Luise Vindahl, are partnering with visit Sweden and organise a Swedish inspired breakfast competition, there is simply no way not to take part! For me it had to be local, seasonal and perfect for Autumn.
And I can tell you, I am very happy with the result. Grandma’s apple pie oatmeal porridge with apple sauce flavoured with sea buckthorn berry juice (havtorn in Swedish), ginger and orange zest. For those of you who now me a little bit, I like to work with different flavours but also with different textures. So I had to add a crunchy element… Roasted pecan nuts. Did you know that pecan nuts grow locally in Sweden?
Sweden is know for its apples, so that had to be the base for this breakfast. Grated in the porridge and cooked for the apple sauce. Wow, the smell and the flavour. I love it. It is also a great way to add some fruit to your breakfast.
Havtorn, well, that is something so special. Local, seasonal, and you can pick them for free. I have really discovered them this year. And I still have a bunch of them in my freezer waiting to be turned into something really great and healthy. They are packed with vitamine C, and next to their acidity there is actually a lot of flavour in them. And not only flavour… look at the colour! Bright bright orange! I really recommend you give them a try!
apple pie oatmeal porridge with sea buckthorn
oatmeal porridge with apple pie flavour served with roasted pecan nuts and sea buckthorn - apple sauce
Ingredients
porridge
- 70 gr oatmeal
- 400 ml almond milk
- 1 apple medium sized
- 20 gr raisins sultana
- 2 tbsp nutbutter almond, hazelnut
- 1 tsp fresh ginger
- 1 tsp cinnamon ceylon
- 1/2 tsp vanilla powder
- 2 tsp agave syrup
- 1/4 tsp cardamom powder
apple sauce
- 1 apple large
- 2 tbsp water
- 65 gr sea buckthorn berries
- 1 tbsp agave syrup
- 1/4 tsp fresh ginger
- 1/4 tsp orange zest
topping
- 20 gr pecan nuts
Instructions

finely grate the ginger, zest the orange, grate 1 apple, peel the other apple and cut into 1 cm cubes. Roast the pecan nuts until crispy
apple sauce

put the apple cubes with 2 tablespoons of water in a small pan, heat and let simmer until the apple is soft. How much time this will take depends a bit on the type of apple you use. But you can count on 10 to 15 minutes. Ones soft use your hand blender to make a sauce

heat in another small pan the berries until they start to release their juice. This will take just a few minutes. Take off the heat and put in a sieve. Press with the round size of a spoon the juice from the berries

add all the ingredients together and stir well

put all the porridge ingredients in a pan, stir well and bring to a boil. Let it boil softly for 2 minutes. Then take it off the heat.

put the porridge in 2 bowls and serve with the lukewarm apple sauce and roasted pecan nuts. There you go, Swedish breakfast at its best!
