There are those days, that your whole body is ‘screaming’ for healthy food. My answer to this is always: soup!
For me soup is a perfect way to eat lots and lots of veggies in a very tasteful way. Most of my days, it’s soup for lunch! My favourite soup? Yes, you have found it, it is the soup you are looking at right now!
This is a recipe I have been making for many years now. Each spoon makes you feel more healthy. Love it!

Pumpkin soup
This soup I can eat each and every day! It is truly my favourite. Each spoon will make you feed more healthy!
Ingredients
- 1 butternut squash large
- 1 red onion medium sized
- 2 cloves garlic
- 1 leek
- 500 gr carrot
- 1 red chili
- 70 gr tomato concentrate
- 125 ml sour cream
- 1 tbsp honey
- 1 l vegetable stock
- 500 ml water boiling
- peper
- sea salt
- 2 tbsp olive oil extra virgin
Garnish
- 15 gr coriander leaves
- 100 gr feta cheese
Instructions

dice the onion, garlic and leek. Deseed the chili and chop. Grate the carrot with the foodprocessor

Chop the 'head' and 'tail' of the squash and then cut in half and deseed. Roughly chop into cubes of 3*3 cm. Leave the skin on!

Prepare the chicken stock and boiling water

Heat the olive oil in a large casserole. Add the onion and fry for 2 minutes. Then add the garlic and fry for another 2 minutes on a medium heat

Add the leak and chili. Mix well and fry for 3 minutes before adding the carrot and squash. Mix and fry for 5 minutes all together

Add the tomato concentrate, creme fraiche, freshly ground peper and honey. Mix well and fry for 3 minutes before adding the stock and boiling water. Bring to a boil. Then put the lid on and let it simmer on a low heat for 45 minutes

Puree the soup with a hand blender. Serve with some freshly ground pepper, coriander leaves and feta cheese
