Vegan cookie dough bliss balls with lemon & lime

Ingredients

  • 75 gr medjool dates
  • 50 gr apricots
  • 50 gr almond flour
  • 50 gr coconut flour
  • 125 gr apple sauce unsweetened
  • 25 gr grated coconut
  • 37,5 gr vanilla protein powder
  • 2 tbsp lemon juice
  • 1 tsp lime zest
  • 1 tsp vanilla extract
  • 20 gr grated coconut garnish
  • 1 pinch salt

Instructions

  1. put the dates, apricots, apple sauce, lemon juice, lime zest, vanille extract and grated coconut in your foodprocessor and mix until it is a puree

  2. add the almond flour, coconut flour, protein powder and salt and mix until it forms a sticky ball

  3. with your hands, roll 16 balls of each 25 grams. To get a nice effect roll them through a bowl filled with grated coconut

  4. put them in your freezer for 30 minutes to stiffen. After than store then in the fridge
