syrup from elderflower, lemon and honey
boil 1 litre of water and add the honey. When the honey is resolved take it form the heat and add the lemon juice
put the elderflower umbels and lemon peel in a pan and poor the honey lemon water on top. Stir carefully, lid on and let it cool down
wait for a minimum of 48 hours, stir occasionally
poor the syrup though a cheese cloth and use a funnel to put it in a sterilised glass bottle. Keep in the fridge. Serve with sparking water
